Menu Plan Monday–Using up

This week we will continue to try and use items from our freezer, refrigerator and pantry.  We did make a couple of trips to the grocery story, but just to fill in items that we needed to complete our meal plan.  I actually crossed off cereal and sandwich meat from our list.  Instead, I made homemade granola, egg salad and chicken salad. I still had turkey from the deli that I bought last week.

In our freezer, we  have leftover ham, a whole  turkey, bacon, turkey brats, chicken breasts, salmon fillets and ground turkey.  I also have frozen broccoli, corn, peas, edamame, lima beans, green beans and zipper peas.  We have plenty of fresh in the fridge–lettuce, tomatoes, oranges, carrots, celery and onions.

Here is what we have planned for this week:

Breakfasts:  cereal and milk  (cereal we already have on hand and homemade granola), yogurt and granola, steel cut oats, toast and fruit

Lunches:  sandwiches, salads, leftovers from diner

Dinners:

Monday–turkey chili, cornsticks

Tuesday-Spanish Rice with turkey brats

Wednesday–salmon fillets, corn, salad with homemade dressing.

Thursday–Easy Chicken and Rice Casserole, peas, salad with homemade dressing.

Friday–Breakfast for Dinner  (eggs, bacon, toast and grits or pancakes and bacon)

Saturday–Spaghetti Sauce, pasta, breadsticks and salad.

Sunday–turkey, dressing, gravy and broccoli   (We will be using leftovers of turkey on next week’s meal plan)

    Hi Lisa! Nice to “meet” you; sounds like we have a lot in common 🙂 I too love being able to cross items off the grocery list when I can make do in some other way. I’m going to check out your chicken/rice casserole recipe. We ate that a lot when I was a child and I loved it. Have a wonderful week!

    My menu planning is non existent for the last 2 weeks. I am putting things together ‘on a go’. Your menu looks amazing though – can I move in? 😉
